Aligot Travels Well

After Paris, Toulouse.

Last Saturday, I happened to run into some happy Toulousains lunching on aligot, Aveyron's cheese and potato specialty, as they enjoyed the Christmas market on the Place du Capitole.

At first I wasn't absolutely sure what these Saturday shoppers were savoring, but a quick look around the market stands revealed potatoes and tomme fraîche all dressed up for the holidays:



I had hoped to get a closer look at the aligot operations, but couldn't break through the crowd at the highly popular stand. I guess aligot is a hit wherever it travels.

The aligot. The name of this tasty loamy dish sounds so pleasant to me!
To prepare Aligot, the most difficult is to find this special cheese named 'la tomme de l'aligot'.
When you find it, you need some potatoes in purée, the melt cheese in them, garlic and creme and that's all. It smells so good in the house!
When I prepare Aligot everybody without exception enjoy it!
Et vive l'Aligot!

Colleen, I didn't have any there, but have had aligot many a time here in Aveyron. It is a traditional dish at big meals and also easy to buy in a very good vacuum-packed form. It's quite a hassle to make, though!

Potato and cheese! I am having a Pavlovian response to your post. If you had shown an up close picture of the ooey-gooey treat I would have been reduced to licking my monitor. ;-)

I loooove aligot!

At our marché de noël the other day I had the greatest cup of mulled wine that I've ever tasted. It was faaantastic. I would have quite liked a bowl of cheesy potatoes to go with...
